Instant Kulfi

Instant kulfi recipe is a quick way to make your favourite frozen dessert kulfi in minutes. Make your favourite flavour.

Ingredients

  1. Full Fat Milk - 1 Ltr
  2. Corn Flour - 2 Tablespoon
  3. Condensed Milk - 400 gm
  4. Almomd Powder - 3 Tablespoon
  5. Cardamom Powder - 2 Teaspoon
  6. Coconut Powder - 2 Tablespoon
  7. Rose Syrup - 1 Tablespoon
  8. Chopped Cashew nuts - 1 Tablespoon
  9. Chopped Raisins - 1 Tablespoon
  10. Grated Dark Chocolate - 2 Tablespoon

Instructions

  1. In a deep boil the milk and simmer it.
  2. In a small bowl make a liquid consistency paste of corn flour and water.
  3. Add this paste to milk and stir to avoid any lumps.
  4. Add condensed milk, almond powder and cardamom powder and stir.
  5. Cook this mixture for about 5 to 7 minutes and remove from heat.
  6. Divide the kulfi mixture in 5 equal portions.
  7. For Badam Kulfi
  8. The base we have prepared let it cool and pour in kulfi mould and freeze it for 8 to 10 hours.
  9. For Coconut Kulfi
  10. Add coconut powder in kulfi mixture when its hot and let it cool and pour in kulfi mould and freeze it for 8 to 10 hours.
  11. For Rose Kulfi
  12. Add rose syrup in kulfi mixture and let it cool and pour in kulfi mould and freeze it for 8 to 10 hours.
  13. For Cashew and Raisin Kulfi
  14. Add chopped cashew and chopped raisins in kulfi mixture and let it cool and pour in kulfi mould and freeze it for 8 to 10 hours.
  15. For Chocolate Kulfi
  16. Add grated dark chocolate in kulfi mixture when its hot and let the chocolate melt by mixing it and let it cool and pour in kulfi mould and freeze it for 8 to 10 hours.

Notes

Try to avoid any lumps by stiring the milk.try to make in nonstick deep pan to avoid sticking and burning the milk from bottom.

Low-Key Valentine Day Celebration – Totally Cool And Romantic !!

Hope you had fun time reading my last post here around the world cup same time last year on how to win remote from your wife on an important match day. If you noticed I mentioned I will post another read on the second most important day; which is Valentine’ day and so here I am. For those feeling the love in the air (and thinking about Valentine Day Celebration ), I hope I will be able to make this a good time for you and for others; well have a good read!

I hope this time around will be a little easy as we are not going around fighting for something (read remote).  But not that easy. Its not a piece of cake trying to please a girl especially on a special day like this. Let see on how we gonna get started on this. 14th this year is going to be a Sunday so that’ a good start. It means you wont need to worry about office and can concentrate better on planning this day out. If you are someone who prefers to start the chores in the morning; you may wish you scroll down to the second part or wait a little as we just go through the part for those who like to start celebrating at the tick of 12. So lets start the plan for your Valentine Day Celebration !!

Low-Key Valentine Day Celebration – Totally Cool And Romantic !!

The best thing to start with is always sweet and since we are talking about the 12am in the night you would probably want to go a little light on the taste as well as your beloved’ tummy. The best thing I could think of is Chocolates; and you will bet girls love them to death. You could accompany them with a nice cup of coffee but I will leave that part to your wish. And since we talk about a special start to the day; the chocolates need to be special as well. The pics look yummy, don’t they? So your start should fit very nicely in your pocket for around 200. Even if you want to accompany them with a couple of roses I think it should be a nice and light start but I would rather keep the flowers for the morning. Flowers somehow seem to make more sense the first thing in the morning; especially when she finds it besides her side of bed as she wakes up 🙂

The Morning Session – Part I (approx Rs. 270/-)

With the night already made sweet and well taken care of you should be well set for a nice morning session. Put an alarm to make sure you get up early and especially before her. Waking up the Princess is a tough ask so make sure your preparations are all in a quiet manner to not disturb the lady. Flowers should be right beside her side on the bed. Do’t go for a full bouquet, rather choose a couple or at max four Roses. Normally for the scene a couple should be just perfect.

Tea or coffee depends on what see normally prefers right up in the morning. So I leave that choice up to you. Like the night before mornings need to be gentle as well, so don’t try for any heavy dessert/item. And since we already used the Chocolates charm in the night, the idea would be not to repeat it but rather choose a nice fitting alternative. The Morning Session – Part II (approx Rs. 100/-)

Seems a nice progress till now. So while she freshens up just make sure you put all the energy behind yourself making the breakfast table look perfect. And since we already did a couple of desserts charisma; lets focus a little on the other items to change the taste a bit.

The hot drink should at this point give way to a nice glass of fresh fruit juice. Orange would be my idea but you know your lady better so again I leave this part to you. If you think the flowers that we used in waking her up did their trick; the breakfast table could do well to be decorated with some Chrysanthemums or Orchids or Lilies. Choice is yours depending on what she would like best. My 2 cents: choose blue lilies. They seem to remind the girls about the wedding and that should be your trump card for the rest of the day to follow.

Keep it subtle and don’t overdo it!!

For the main items on the table, I would prefer some street food like platting. Just to give her a surprise. And for that the Potli Samosa or the Rajasthani Pyaz ki Kachauri would do just fine!! Not to mention the tangy taste of the chutney to accompany with it.

The Afternoon

The day should be a mix of in house time and time spent outdoors. So while my suggestions on the food items are likely to make sure to be light on your pocket, choose the outing to let her do some shopping, eat out and roam around with you.

The Evening

In case you are looking to stay indoors in the afternoon time and do the outing in evening; just swap these two sections here. We plan on keeping the cake for the finale so just make sure to have some appetite left in case you are out in the evening.

The dusk is the most romantic period of the day. If you have a terrace, a balcony or a window to sit by nicely; make that a cozy place and spend sometime talking about whatever you may like. Girls love to talk and that’s a universal truth (no pun intended). The day would be that much more memorable if you spend a couple hours just on this note. The weather during this time of the year is, well, romantic enough and the sky should do the trick as well.

Once you start to think of the dinner time, there is this appetizer that should be a really good start. Ginger Chili Mushroom Fry in this weather and mood should just be the apt start to dinner time.

Candle light dinners are still in fashion, but I suggest to wait for a little longer for this set and we will come back to it in a while.

Done with the dinner? Let her still be surprised and guessing on what you are up to next. There are chances that she was at this point searching for a candle light table setup. The idea is not to disappoint her of course. But let her do some guess work for a while and try to have her engaged in some other activity. TV at this point could serve a good distraction.

While she is a little busy you head on to decorate that candle light setup on your terrace (or whatever place seems fit based on your location). Again a chocolate flavor is the most preferred one in this cake as well but you can choose from other flavors as well. The cake is covered in a cream and then topped with the cream roses. the heart shape takes all the attention here and is perfect for this occasion.

Tiramisu is a coffee flavoured Italian dessert. I prepared in this recipe the Tiramisu shots. The main ingredients to the Tiramisu cake are the sponge or Lady fingers dipped in coffee. While this recipe is eggless so we prepare an eggless sponge cake that we could use in our version of recipe. However if you would like the egg to be part of the dish; you could add the egg in the preparation step for the sponge cake.

Tiramisu Shot is an amazing and short version of Italian dessert Tiramisu. The original shape of the cake is round and often assembled in a big round or square glass bowl, which shows the various layers. In Italian actual meaning of Tiramisu is “pick me up”. It’s a dessert consisting of layers of sponge cake or lady fingers soaked in coffee or liqueur layered with a whipped mixture of eggs, sugar, and mascarpone cheese. So I have made two changes here, I made this dessert eggless and keep my tiramisu layers in simple shot glasses so anyone can enjoy this dessert individually and you don’t have to cut and pick a portion of of your dessert just pick your Tiramisu Shot.

A new version of Italian dessert Tiramisu in shot glasses.

Ingredients

    For Eggless Sponge Cake
  1. Powder Sugar - 1/2 Cup
  2. Sweetened Condensed Milk - 1/2 Cup
  3. All Purpose Flour(Maida) - 1 Cup
  4. Refined Vegetable Oil - 1/2 Cup
  5. Milk - 1 Cup
  6. Baking Powder - 1 Tablespoon
  7. Baking Soda - 1 Teaspoon
  8. Vanilla Essence - 1 Drop
  9. For Tiramisu Cream
  10. Vanilla Custard Powder - 2 Tablespoon
  11. Milk - 1 1/2 Cup
  12. Sugar - 1 1/2 Tablespoon
  13. Homemade Cream Cheese - 2 Tablespoon
  14. Whipping Cream - 1 Cup
  15. Icing Sugar - 1 Tablespoon
  16. For Coffee Liquor
  17. Coffee Powder - 2 Tablespoon
  18. Sugar - 1 Tablespoon
  19. Water - 4 Cup

Instructions

    For Eggless Sponge cake
  1. Combine the condensed milk and powder sugar in a deep bowl and beat for 2 minutes using hand whisker or electric beater.
  2. Sieve the flour, baking powder, baking soda into the bowl.
  3. Add vegetable oil, vanilla essence and milk into the bowl.
  4. Beat altogether for 3 to 4 minutes.
  5. Pour the batter into a greased cake tin.
  6. Bake in a pre-heated oven at 180ºc (360ºf) for 25 minutes.
  7. The cake is ready when it leaves the sides of the tin and is springy to touch.
  8. Invert the tin over a rack and tap sharply to unmould the cake.
  9. Keep aside to cool.
  10. For Coffee Liquor
  11. Mix coffee powder, sugar and warm water together and keep aside.
  12. For Tiramisu Cream
  13. Combine the custard powder, sugar and 2½ tbsp of milk in a bowl and mix well to make a smooth paste. Keep aside.
  14. Boil the remaining milk in a deep pan, add the custard powder paste and whisk continuously till no lumps remain.
  15. Simmer the custard on a medium flame for 3 to 4 minutes, while stirring continuously. Remove from the flame and keep aside and refrigerate.
  16. In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat.
  17. Now blend the chilled custard and cream cheese in an electric blender.
  18. In a deep bowl take the mixture of custard and cream cheese and fold the whipping cream with them by adding gradually.
  19. Now the cream for tiramisu us ready.
  20. How To Proceed
  21. Now take the shot glasses in which tiramisu will be assembled.
  22. Cut the sponge cake into small round pieces just like the size of the shot glass's circumference as they are going to be assembled in glasses.
  23. To Assemble, soak the round pieces of cake in coffee liquor and put in glass to make a layer.
  24. In second layer fill the tiramisu cream.
  25. Again put soaked piece of cake in glass and cover it with tiramisu cream.
  26. Now sprinkle the coffee powder on top.
  27. You can make the chocolate garnishes on top too.
  28. Keep them in refrigerator for 2 hours at least before serving it.

Notes

Soak the cake pieces in coffee liquor well to make them very soft.
