India vs Pakistan – 5 Ways To Win TV Remote Fight

If you are a cricket buff like I am, 15th Feb 2015, that is the coming Sunday, would be more of a worry for you rather than the day prior to that. Not that I am marking 14th Feb as a useless day (so if you are a lady reading this, please don’t get offended; you will love the end result of this post more than your husbands will !!) but for the second best day of the year (the first one being your wife’ birthday) I will keep another post running some time soon!

So yeah shifting the focus back to cricket, I am sure your mind is already running plans to find a way to catch hold of the TV remote to be able to watch the epic battle that India vs Pakistan matches are normally considered to be. After all TV remote fight is nothing less than an Ind vs Pak battle. The Valentine day’ gifts, a day prior, would surely help but if you are looking for some more, I present to you five lovely recipes that you could churn in no time to give your awesome wife a well deserved Sunday rest (and that win over the TV remote to you). If she can be kept out of the kitchen with no worries, I bet you a free treat the TV remote will not get her touch for a full one day!

If you are in India, pay special attention to the breakfast time. The match will start at around 9:00 am IST, so you need to make sure that the awesome work you did previous day gets carried over on THE next morning. I suggest 2 items here that can be the best start to the morning considering that we are still not out of winter and the early morning cold wind is just a perfect time for these kind of recipes.

Mixed Palak Pakoda or Pav Bhaji

I leave it to you to decide in between the two! If the lady of the house is comfortable with deep-fried in the morning; go for mixed palak pakodas (Spinach Fritters) as they are healthy and the perfect tea time snacks as well.

Although if you need an item that is a bit heavy feeling (to last till lunch and keep her lethargy going) yet looks tempting and light; pav bhaji is even a better option!!

Chilly Ginger Mushroom Fry

The first session should last around 3.5 hrs which means you need to make sure you start the lunch preparation somewhere around 12:30 pm IST and be done with it just before 1:15 pm IST (Remember the Note I put before we started with recipes). During this time if you think there is no danger in losing the territory, you may provide the remote to your beloved. Just make sure you don’t lose it altogether 😉 .

Looking at this Chilly Ginger Mushroom Fry I would say its the best to be cooked in quick time. All you need is make sure you have all the ingredients ready before hand and all chopping done. This is only treated as a starter so make sure you don’t give all the 45 min to it or else the main course dish will make you miss the start of second half. Utilize the innings break to prepare this starter as well as the main item I describe next!

Stuffed Tomato with Paneer (with Rumali Roti)

As with Chilly Ginger Mushroom Fry, get your ingredients ready before hand. Both the items are lunch items and need some fry so you should be able to do them in parallel in the kitchen. Both these don’t take that much time and are quick recipes as specified on Flavour Basket so the innings break should be good enough. You may substitute potatoes in place of paneer (cottage cheese) in case you think the lady will like that more.

Unless you are really fast I assume you won’t get the time for bread. And since you can’t do away with this, I suggest you order some from a nearby restaurant. Looking at the items I suggest, I would say Rumali Roti would best fit. As obvious, I let you decide on the quantity!!

Stuffed tomato with paneer is an interesting and tasty way to include paneer and tomato in your diet.Take care not to over cook them as they will soften and loose their shape. They need to be firm enough to hold their shape.                      
                                Ingredients For Stuffed Tomato With Paneer

  • Onion Paste – 1 Cup
  • Tomato Puree – 3/4 Cup
  • Grated Paneer – 1 Cup
  • Fresh Tomato – 5 Medium Size
  • Coriander Powder – 1 Tablespoon
  • Red Chili Powder  – 1 Tablespoon
  • Turmeric Powder – 1/2 Tablespoon
  • Ginger Garlic Paste – 1 Tablespoon
  • Garam Masala Powder – 1 Tablespoon
  • Cumin Seeds (Jeera) – 1 Teaspoon
  • Fennel Seeds (Saunf) – 1 Teaspoon
  • Black Peppercorn – 5 or 6
  • Black Cardamom (Badi elaichi) – 1
  • Vegetable Oil – 2 Tablespoon
  • Salt to Taste

                               Method For Stuffed Tomato With Paneer

  • Cut out the tops of the tomatoes and scoop out the centre pulp. Keep the scooped pulp aside.
  • Take grated paneer and add salt for taste and pinch of turmeric powder for the colour. 
  • Fill the tomato cups with the paneer and cover them with the top of the tomatoes.
  • Heat the oil in different pan and add cumin seeds, fennel seeds, black peppercorn and black cardamom.
  • When seeds are crackling add onion paste and saute for 1/2 Minute.
  • Add tomato puree, pulp, ginger garlic paste,coriander powder, red chili powder and turmeric powder and mix well.
  • Saute the mixture in medium and high flame till the oil separates out.
  • Add water as necessary to make a nice thick gravy.
  • When gravy comes to boil add garam masala powder and salt to taste and mix well.
  • Put stuffed and capped tomatoes in this gravy and cover them with gravy from all sides.
  • Cover the pan with the lid and cook them in low flame till they got soft and don’t over cook them otherwise they will loose their shape. 
  • Check the tomatoes after 15 to 20 mins ,they are soft switch off the flame.
  • Serve hot with roti or rice.

Sarson Ka Saag

Sarson Ka Saag..a popular north Indian vegetable dish made with mustard leaves and spices, traditionally served with makki ki roti…can be topped with butter or ghee..

  • Makes 4 servings

sarson ka saag Sarson Ka Saag…a winter delicacy loved by almost everyone and traditionally paired with makki ki roti. It has very distinct flavour, super healthy as it has green leafy vegetables and super easy to make. I had to try this recipe as its my first time to make Sarson Ka saag at home. Its really fun when you make something new which looks like impossible to make but this vegetable dish is super super easy and when health comes in mind Sarson Ka Saag get full marks.It has mustard leaves, spinach leaves and lamb’s quarters (Bathua) and some spices.


                               Ingredients For Sarson Ka Saag

  • Fresh Mustard Leaves (Sarson) – 5 Bunches
  • Fresh Spinach Leaves (Palak) – 1 Bunch
  • Fresh Lamb’s Quarter (Bathua) – 1 Bunch
  • Gram Flour (Besan) or Maize Flour(makai) – 3 Tablespoons
  • Cumin Seeds (zeera) – 1 Teaspoon
  • Fennel  Seeds (saunf) – 1 Teaspoon
  • Asafoetida Powder (Heeng) – 1/2 Teaspoon
  • Onion – 2 Finely Chopped
  • Ginger Paste – 1 Tablespoon
  • Garlic Paste – 1 Tablespoon
  • Tomato – 2 into a Fine paste
  • Green Chilies – 2 Finely Chopped
  • Coriander Powder – 1/2 Tablespoon
  • Turmeric Powder – 1/2 Teaspoon
  • Garam Masala Powder – 1 Tablespoon
  • Vegetable Oil – 2 Tablespoons
  • Salt to taste

                                     Method For Sarson Ka Saag
  • Wash all green leafy vegetables and cook them in a pressure cooker with 1 cup of water. Switch off the flame in 2 whistle.
  • Keep aside to cool and then blend to a coarse paste using mixer.
  • Heat oil in a pan add cumin seeds and fennel seeds.
  • When crackle add asafoetida (heeng) powder.
  • Add chopped onion and saute for 2 mins
  • Add ginger and garlic paste and saute for another 2 mins
  • Add gram flour(besan) and saute for 1 min.
  • Add tomato paste, coriander powder, turmeric powder and chopped green chilies and cook for 5 mins.
  • Add the green coarse paste ,garam masala and salt.
  • Add little bit of water, stir well and cook till the oil starts to separates.
  • Serve hot with paratha or makki ki roti.
Handy Tip
  • Other vegetables like broccoli or fenugreek leaves(methi) can be added to make it more flavorful and healthy.
Pav Bhaji

Pav Bhaji

Pav Bhaji is a spicy blend of vegetables in onion tomato gravy served with pav toasted in butter. This Maharashtrian fast food dish is garnished with coriander , chopped onion , a dash of lemon and lightly toasted pav.

Preparation Time – 10 Mins
Cooking Time – 30 Mins
Serves 4 plate

Pav Bhaji

Pav Bhaji , my most favourite dish and it everytime just tickles my taste buds. I must say its an innovation of a hot meal that just can be grabbed on the go. It is easy to cook and also filling. Every time I go to a street stall I just ask for the pav bhaji. I think its a hurried meal for the man in the street. I made bhaji many times with pav bhaji masala and always thought its a magic masala but this time I made bhaji with spices those are already available in my pantry. I have also added red food colour to my bhaji to give it a nice red colour which we found mostly pav bhaji dish in any street stall.Bhaji with pav, its the most magical part of the dish that bhaji is served with the pav toasted with the oodles of butter.

                                      Ingredients For Pav Bhaji

For Pav

  • Pav – 8
  • Butter – 4 Tbs
For Bhaji
  • Cauliflower – 1 Cup roughly chopped
  • Cabbage – 1 Cup roughly chopped
  • Potato – 1 Cup roughly chopped
  • Onion – 1 1/2 Cup Finely chopped
  • Ginger Garlic Paste – 1/2 Cup
  • Tomato – 1 Cup finely chopped
  • Cumin Seeds – 1 tbs
  • Asafoetida Powder(Heeng) – 1/2 tbs
  • Coriander Powder – 3 tbs
  • Fennel Powder – 1 tbs
  • Kasuri Methi – 1 tbs
  • Red Chili Powder – 1 tbs
  • Turmeric Powder – 1/2 tbs
  • Oil – 2 tbs
  • Butter – 25 gm
  • Salt to taste
  • Water as required
  • Red Food Colour – 1/2 pinch (Optional)

Pav Bhaji

                                           Method For Pav Bhaji
For Bhaji
  • Pressure cook the cauliflower , cabbage and potato with little bit of water.
  • Heat the oil in a large pan, add cumin seeds and asafoetida powder.
  • When crackle add chopped onion and saute for 2-3 mins till they get lightly brown.
  • Add ginger garlic paste and saute for 1 min.Add coriander powder and mix.
  • Add chopped tomato and mix.Add little bit of water and cook for 1 min.
  • Add fennel powder, kasuri methi, red chili powder and turmeric.
  • Cook for 2 to 3 min till the tomato gets soft.
  • Add the boiled vegetables and mash thoroughly with a masher.
  • Add water if required.
  • Add Butter and mix.
  • Add salt and mix.
  • Add red food colour to give it a nice red colour.(optional)
For Pav
  • Slice each pav into 2 horizontally.
  • Apply a little butter on each side of pav.
  • Heat the tawa and cook the pav till they are crisp and lightly brown.
How to Proceed
  • Serve the hot bhaji top with the chopped onion ,coriander leaves and lemon wedges.
  • Serve it with hot and crisp pav.
  • Bhaji can be made with any combination of vegetables.
  • Cabbage gives the smooth texture to bhaji.(my personal experience)
  • Use good quality of  food colour.

Bharwan Tinde

Bharwan Tinde is a special and delicious stuffed vegetable recipe with tinde (or apple gourd) stuffed with some Indian spices mix. These stuffed tinde can be served with roti or naan or with any other breads.

Summers are best when you spend them at your parents place. This summer has lots to say as many gatherings happened with my loved ones and a new little member. And I actually learnt some cooking. Cooking is fun and sharing this experience to others is more fun.After taking a long break I am now here to share my other new recipe of a not so liked vegetable called Tinda or apple guard. I know it sounds boring but trust me bharwan tinde can make you love with this vegetable because it has all the flavors. Give it a try…its healthy, tasty and very easy to make.

                                      Ingredients For Bharwan Tinde 

For Bharwan Tinde
  • Tinde / Apple Guard – 20
  • Oil – 2 Tbs
  • Water as required

For Masala Mix

  • Raw Mango puree – 1 Cup
  • Coriander Seeds – 2 Tbs
  • Turmeric Powder – 1 Tbs
  • Red Chili Powder – 1 Tbs
  • Asafoetida Powder – 1/2 Tbs
  • Cumin Seeds – 1/3 Tbs
  • Oil – 3 Tbs
  • Scooped out seeds of tinde/apple guard
  • Water as required
  • Salt to taste

                                               Method For Bharwan Tinde

For Masala Mix
  • Cut upper side of every tinda / apple guard and keep it aside.Scoop out all the seeds of every tinda and keep aside.
  • Take all the ingredients for the masala and blend it into a smooth paste.
  • In a hot pan or in a Kadhai take oil and pour the masala paste into it.
  • Cook this masala mix for 10 mins and then remove from the flame.
For Bharwan Tinde
  • Fill the tindas with the portion of the fillings and close them with their respective upper sides.
  • Leave some masala mix for the gravy.
  • Heat oil in the same kadhai in which masala mix has been cooked.
  • Add the stuffed tinde along with the remaining masala mix.
  • Add some water and cover the kadhai.
  • Cook for 20 mins on a low medium heat.
  • When tinde will completely cooked remove from the flame.
  • Serve hot.
