How about chocolate :). It works, always works. At least with me it always has. So it wasn’t a surprise that I let this one be done by kids (under adult supervision, obviously).

Chocolaty Coffee Cup Cakes Recipe-Kids Special

Ingredients

  1. All Purpose Flour : 1 cup
  2. Powder Sugar : 1/2 cup
  3. Vegetable Oil : 1/2 cup
  4. Coffee Powder : 1 tbsp
  5. Salt : 1/2 tsp
  6. Condensed Milk : 1/2 cup
  7. Milk : 1 cup
  8. Baking Powder : 1 tsp
  9. Baking Soda : 1/2 tsp
  10. Vanilla Essence : 1 tsp
  11. Dark Chocolate (Melted) : 1.5 tbsp

Instructions

  1. Start by taking the powder sugar into a bowl
  2. Add condensed milk to it
  3. Mix it nicely; better would be to beat the mix
  4. Once done, add the vegetable oil to it and mix it nicely
  5. Sift the all purpose flour, coffee powder, baking powder and baking soda and add all these to the mix
  6. Add Milk and mix well so as to avoid any lump formation in it
  7. Now add the vanilla essence and melted dark chocolate to this mix
  8. Add salt as well and mix it nicely once more
  9. Once its mixed nicely, you complete the batter preparation for our cup cakes. Time to bake!
  10. Put the oven to preheat at 180°C
  11. In the meantime, start putting butter paper to the microwave safe cup cake moulds
  12. Now add the batter to these moulds to fill the cup cake shaped butter paper to 2/3rd of their capacity
  13. Make sure not to put more than 2/3rd or else the batter will over flow as you bake them
  14. Once done with the filling see that the oven is ready, if so put the moulds to oven for baking
  15. Leave the moulds in the oven for around 15-20 min (mine were ready in close to 20)
  16. Do a check that they have baked properly or else bake them a little more as per need
  17. Once done, take them out of the oven and let them cool for around 5 min
  18. Time to demould and maybe garnish them with a little sprinkle of icing sugar

Dahi Vada is one of the famous festive item in every Indian home. These are made with love and off course made in bulk. Whenever we had Dahi vada at home or at any occasion we just sit in the corner and enjoy most spongy and chat pata item and hope no one disturbs you in your own world. Actually it happens to me. Dahi Vadas are really easy to make for any festive season. 

 

Holi Special Dahi Vada

 

The hot deep fried vadas are first soaked in luke warm water and transferred to thick beaten yogurt. To add more flavour they may be topped with coriander or mint leaves and for garnishing dry mango powder sauce (amchur ki chutney) is best.

These Dahi vadas are made with yellow lentils and green lentils and accompanied with yogurt and an instant dry mango powder sauce.
Ingredients
  • Yellow Moong Dal - 1 Cup
  • Yellow Urad Dal - ½ Cup
  • Asafoetida Powder (heeng) - 1 Tablespoon
  • Yogurt - 1 Cup
  • Dry Mango Powder Sauce(Amchur Ki chutney) - ½ Cup
  • Chili Powder - 1 teaspoon
  • Roasted Cumin powder - 1 teaspoon
  • Salt to taste
  • Sugar to taste
  • Cooking Oil For Frying
  • Water as needed
Instructions
  1. Soak the both lentils in water for 3 to 4 hours or overnight.
  2. Wash and drain the lentils.
  3. Grind both the lentils separately in a blender and make a smooth paste.
  4. Mix both the lentils paste into a big bowl and beat them using electric beater or hand for 2 to 3 mins.If using hands beat for 5 to 7 mins.
  5. Now take some batter with the help of your fingers and make a ball.
  6. Deep fry the balls in hot oil in low medium flame till the vadas are golden brown.
  7. Take out the vadas from the oil and soak them in luke warm water with some salt added in that water.
  8. Soak vadas for about 30 mins to 1 hour.
  9. Just before serving squeeze out the excess water from the vadas.
  10. Add sugar and salt as per taste in yogurt and beat it to make it smooth.
  11. Now arrange the vadas on the serving dish and top with the whisked yogurt.
  12. Garnish with the rosted cumin powder, chili powder, dry mango powder sauce(amchur ki chutney) and pomegranate seeds.
Notes
To add more flavor, Dahi Vada may be topped with coriander or mint leaves, crushed black pepper, chaat masala, shredded coconut, green chilis or boondi.

Eggless Molten Chocolate Lava Cake is really having a science to make it. I have to experiment it for 6 times with all failures and 7th one was a hit. The basic science is to make it the right temperature with the right baking time other wise it will turn out just like a cup cake or just melted lava. I have make it in 230°C temperature with 7 mins baking time. There is one technique to make lava cake is the high temperature and less baking time and the baking time is depends on the size of the ramekins and moulds. So next time when you make these cute lava cakes first check the right baking time for them.

Ingredients For Eggless Molten Chocolate Lava Cake 

  • Powder Sugar – 1/4 Cup
  • Salted Butter – 1/4 Cup
  • Milk – 1/2 Cup
  • Condensed Milk – 1/4 Cup
  • All Purpose Flour (Maida) – 1/4 Cup
  • Dark Chocolate Chunks – 1/4 Cup
  • Instant Coffee Powder – 1 teaspoon
  • Baking Powder – 1 teaspoon
  • Baking Soda – 1/2 teaspoon

                       Method For Eggless Molten Chocolate Lava Cake
  • Take dark chocolate chunks and salted butter together in a bowl and microwave it for 1 min. Stir the melted chocolate and butter mixture to mix it properly.
  • Add the condensed milk and mix nicely.
  • Take the all dry ingredients in a different bowl and mix them properly.
  • Add chocolate, butter and condensed milk mixture into it and mix properly to avoid any lumps.
  • Add the milk and mix nicely.
  • Take some cup cake moulds or ramekins and grease them with some edible oil and dust some flour over the moulds so the lava cake don’t really stick to the walls of moulds and came out easily.
  • Fill the moulds with the batter up to 3/4th of their size. 
  • Preheat the oven at 230°C and put the filled moulds onto the baking tray and bake them for 7 mins.
  • Once the baking is done give them a 3 min rest.
  • After resting the lava cake invert them slowly in the serving dish.
  • When cut the molten lava comes out from the cake.
  • Beware its hot.
Handy Tip
  • The baking time of Eggless Molten Chocolate Lava Cake is depend on the size of the moulds. Its like more baking leads to less lava.

Rasgulla

Rasgulla is a super soft , milk- white and the famous bengali sweet which is relished in all over India and popular in abroad as well. 

Preparation Time – 15 Mins
Cooking Time – 20 Mins

This time I made the perfect Rasgulla…first two trial was the disaster. This time my Rasgulla were juicy, spongy and super soft. Its tricky to make perfect rasgulla but process is easy from the amount of lemon juice used to make the lump free chenna, to the right consistency of sugar water.

                                               Ingredients For Rasgulla

For Chenna

  • Full Cream Milk – 1 ltr
  • lemon – 2 (squeeze out the juice)

For Sugar Syrup

  • Water – 8 Cup
  • Sugar – 2 Cup

                                                 Method For Rasgulla

For Chenna

  • Boil the full cream milk.
  • Once the milk starts boiling switch off the flame and wait for 1 minute.
  • Add the lemon juice gradually and keep stirring gently.
  • When completely curdled (when the chenna and the greenish water separates out ) strain the chenna using muslin cloth.
  • Place the chenna with the muslin cloth and wash it with cold water for 2-3 times to remove the lemony flavour from the chenna. 
  • Tie and hang for 3 mins for extra water to drain out.

For Sugar Syrup

  • Put the water in a wide and deep pan.
  • Add the sugar and bring to boil whole stirring occasionally.

How To Proceed

  • Meanwhile, squeeze the muslin cloth and drain out the remaining water.
  • Take out the chenna from the muslin cloth to flat plate and knead it for 4 to 5 mins to make it smooth and lump free.
  • Divide the chenna into equal portions and roll each portion into small balls using your palms.
  • Now when the syrup is boiling add the balls into it and cover it.
  • Boil the balls for 15 mins while checking in between for 1-2 times. Keep the flame on high.The water should be continuously boiling. 
  • The balls will become double in size,
  • Switch off the flame and let it rest till rasgulla come in room temperature.
  • Remove gently into a bowl, refrigerate and serve chilled.

Chocolate Burfi is made from milk and dark chocolate, a special dessert for festival and parties, take a bite and chew for a minute to let the flavours float in your mouth and let your taste buds arouse.

Chocolate is favourite to everyone specially kids like it more So here my second dessert for this festive season is Chocolate burfi. Again this dessert is also in easy recipes list as it has only three ingredients full cream milk, chocolate and sugar. I have used white chocolate too for the topping of Chocolate burfi.

                                          Ingredients For Chocolate Burfi

  • Full Cream Milk – 1 ltr
  • Dark Chocolate – 1/3 Cup
  • Sugar – 3 Tbls
  • White Chocolate – 1/4 Cup

                                         Method For Chocolate Burfi
  • Cook the milk on high and medium flame while stirring occasionally.
  • Add sugar when milk becomes slightly thick or semi solid.
  • When the mixture becomes thick switch off the flame.
  • Add dark chocolate and mix it till the chocolate melted completely.
  • Transfer the chocolate mixture on a greased plate and spread it evenly using a flat spoon. 
  • Keep aside.
  • Melt the white chocolate in double boiler or in microwave.
  • Spread it evenly on to chocolate mixture.
  • Let it cool in room temperature.
  • Once cool make square cuts on the chocolate mixture and refrigerate for 20 to 30 mins.
  • Cut into pieces.
  • Serve or store it.
