Vanilla Swiss Roll is in my favorite dessert as it’s easy to make and it looks so gorgeous that nothing can resist you from being a fan of this simple dessert.  There can be different variety of flavours you can choose like chocolate, strawberry or anything as there are many exotic flavours present in this earth. I sometimes think we should always be thanked to our mother earth for providing us these different flavours 🙂 so I can create something new and delicious. For this Roll there is a technique to roll it..The sponge cake should be cooled completely before rolling it and there should be small rolls to save it from cracking. For designing the pattern I have used red food colour..or you can use strawberry crush or cherry crush to add some natural colour.

Vanilla Swiss Roll

A home made Vanilla Swiss Roll where swiss roll is made with eggless sponge cake with some beautiful design on it.

Ingredients

    For Vanilla Sponge Cake
  1. All Purpose Flour - 1/2 Cup
  2. Milk - 1/2 Cup
  3. Condensed Milk - 1/4 Cup
  4. Powder Sugar - 1/4 Cup
  5. Vegetable Oil - 1/4 Cup
  6. Vanilla Essence - 1/2 Teaspoon
  7. Baking Powder - 1/2 Tablespoon
  8. Baking Soda - 1/4 Tablespoon
  9. For The Swiss Roll Pattern (Next time it will be more beautiful as it was my first trial)
  10. Vanilla Sponge Cake Batter - 2 Tablespoon
  11. Red Food Colour - 1 Drop (can be used more for darker colour)
  12. Icing
  13. Whipping Cream

Instructions

    For The Sponge Cake Batter
  1. Take powder sugar and condensed milk in a bowl and whisk well till the mixture become smooth.
  2. Sieve the all purpose flour, baking powder, baking soda together and add them into the powder sugar and condensed milk mixture.
  3. Add vegetable oil, vanilla essence and milk.
  4. Whisk all the ingredients well for 3 to 4 mins to make a smooth and fluffy batter.
  5. Keep It aside.
  6. For the Swiss Roll Pattern Batter
  7. Take 2 tablespoon of vanilla sponge cake batter.
  8. Add 1 drop of red food colour and whisk well to blend red food colour completely in batter.
  9. Fill a piping bag, with plain nozzle fitted, red coloured batter.
  10. Keep it aside.
  11. How To Proceed
  12. Line a 8'" square baking pan with parchment paper.
  13. Grease the parchment paper with oil or butter.
  14. Now make some designs on the parchment paper with the piping bag of red coloured batter.
  15. When the designs for pattern is complete, freeze the pattern for 10 mins.
  16. After freezing 10 mins, pour remaining vanilla sponge cake batter onto the baking pan and spred the batter evenly.
  17. Bake the cake in a pre-heated oven with 180°C for 8 to 10 mins.
  18. Do not over bake the cake otherwise it will be dry and may cause to cracking while rolling the cake.
  19. After baking rest the cake and let it cool completely
  20. After cooling the cake, spread whipping cream on it evenly.
  21. Now for rolling the cake, carefully lift one end of the parchment paper and roll up the sponge.
  22. Your Vanilla swiss roll is ready for any party 🙂 .
  23. You can slice it when your guests are arrived :-).

Notes

Freezing the pattern for 10 mins is important as it will hold the appearance of pattern just like the way it is. Some where my pattern was disturbed because I take out my swiss roll pattern before 10 min from the freezer.

Eggless Bread Pudding Dessert

Ingredients

  1. Dry Fruits : chopped
  2. Vanilla Essence : 1 tbsp
  3. Vanilla Custard Powder : 2 tbsp
  4. Sugar : 1/2 cup
  5. Butter : 2 tbsp
  6. Milk : 3 cup n warm
  7. Whole Wheat Bread Slices : As per need

Instructions

  1. Start by greasing the baking dish with melted butter
  2. Grease it nicely as well as on the sides to avoid the pudding sticking to the dish
  3. Take the bread slices and cut them into equal 4 parts
  4. Arrange these sliced pieces into the baking dish to make the base layer of our pudding
  5. Once done, sprinkle some dry fruits on this bread layer
  6. Sprinkle the dry fruits well so as to create a nice mid layer
  7. Once satisfied, create another layer of bread slices on top of this dry fruit layer
  8. Now to create our custard paste; mix the sugar and butter to the warm milk and mix nicely
  9. Create the custard mix in a small bowl with some milk, mix nicely and finally add to the milk and butter mix
  10. Add vanilla essence to this mix and mix nicely
  11. Make this custard paste viscous as per your taste
  12. Once satisfied, pour this custard mix/paste on the bread layers that's sitting in our baking dish
  13. Make sure to spread the custard paste evenly over the bread layer
  14. Let the bread soak the custard mix for a few minutes
  15. In the meantime, preheat your oven at around 190 degrees
  16. Once the oven is ready, bake the dish for about 20-25 minutes
  17. That' it, serve it with chocolate syrup and hot coffee 🙂

Notes

Serve hot or serve cold. Similarly serve with hot coffee or cold as per your mood !!

I said Natural Red Velvet Cake it means instead of using any food colouring in my red velvet cake I have used homemade beetroot juice to make red velvet cake and trust me there were no earthy flavour of beetroot in my cake. I have used vinegar, lemon juice and buttermilk in this recipe to maintain the red colour of cake, I mean the three are acidic in nature and they will help to keep the red colour of beetroot as it is after baking the cake otherwise cake will turn brown and we don’t want that. So lets make it :).

Natural Red Velvet Cake Eggless

Ingredients For Valentine Special – Natural Red velvet Cake Eggless

  • All Purpose Flour(maida) – 1 Cup
  • Powder Sugar – 1/2 Cup
  • Vegetable Oil – 1/2 Cup
  • Condensed Milk – 1/2 Cup
  • Baking Powder – 1 1/2 tablespoon
  • Butter Milk – 1 Cup
  • Vanilla Essence – 1 Teaspoon
  • Lemon Juice – 2 tablespoon
  • White Vinegar – 2 tablespoon
  • Beetroot Juice – 1/2 Cup
  • Dark Chocolate  – 1/4 Cup

Natural Red Velvet Cake Eggless

Method For Valentine Special – Natural Red Velvet Cake Eggless
  • To make beetroot juice for the cake, squeeze all juice of beetroots using juicer and cook it for 5 mins and let it cool.
  • In a bowl add powder sugar and condensed milk and beat it for 2 to 3 mins till both ingredients mixed well.
  • sift the all purpose flour and baking powder in the mixture.
  • Add vegetable oil, butter milk and vanilla essence and beat the mixture for 2 to 3 mins again to make it smooth batter.
  • To the beetroot juice add lemon juice and white vinegar and mix it.
  • Now add beetroot juice, lemon juice and white vinegar mixture into batter.
  • Add melted dark chocolate and beat again this full mixture to make a nice and smooth batter.
  • Grease the microwave container so the baked cake come out easily after baking.
  • Bake the cake in a preheated oven with 180 degrees C for around 20 to 35 mins.
  • Once cake is baked let it cool and invert it from the container.
  • Cut it in a heart shape or you can use heart shape mould.
  • Now apply whipped cream over the one layer of cake and cover it with second layer of cake.
  • Now again apply whipped cream over the second layer and apply strawberry glaze as topping of the cake.

Eggless Molten Chocolate Lava Cake is really having a science to make it. I have to experiment it for 6 times with all failures and 7th one was a hit. The basic science is to make it the right temperature with the right baking time other wise it will turn out just like a cup cake or just melted lava. I have make it in 230°C temperature with 7 mins baking time. There is one technique to make lava cake is the high temperature and less baking time and the baking time is depends on the size of the ramekins and moulds. So next time when you make these cute lava cakes first check the right baking time for them.

  • Powder Sugar – 1/4 Cup
  • Salted Butter – 1/4 Cup
  • Milk – 1/2 Cup
  • Condensed Milk – 1/4 Cup
  • All Purpose Flour (Maida) – 1/4 Cup
  • Dark Chocolate Chunks – 1/4 Cup
  • Instant Coffee Powder – 1 teaspoon
  • Baking Powder – 1 teaspoon
  • Baking Soda – 1/2 teaspoon

                       Method For Eggless Molten Chocolate Lava Cake
  • Take dark chocolate chunks and salted butter together in a bowl and microwave it for 1 min. Stir the melted chocolate and butter mixture to mix it properly.
  • Add the condensed milk and mix nicely.
  • Take the all dry ingredients in a different bowl and mix them properly.
  • Add chocolate, butter and condensed milk mixture into it and mix properly to avoid any lumps.
  • Add the milk and mix nicely.
  • Take some cup cake moulds or ramekins and grease them with some edible oil and dust some flour over the moulds so the lava cake don’t really stick to the walls of moulds and came out easily.
  • Fill the moulds with the batter up to 3/4th of their size. 
  • Preheat the oven at 230°C and put the filled moulds onto the baking tray and bake them for 7 mins.
  • Once the baking is done give them a 3 min rest.
  • After resting the lava cake invert them slowly in the serving dish.
  • When cut the molten lava comes out from the cake.
  • Beware its hot.
Handy Tip
  • The baking time of Eggless Molten Chocolate Lava Cake is depend on the size of the moulds. Its like more baking leads to less lava.

Mango season is almost gone..so before I say bye bye to mangoes I had to try a recipe with mangoes. so why should it not be a cake as I love to try different cake recipes. Mango is a fruit loved by everyone or I can say its a food of God. In this recipe I have caramelized the mangoes with some sugar and few drops of lemon. Mango Vanilla Cake has a vanilla sponge cake as a base and mangoes as a filling. I know It was not perfect in looks but it taste was great as said by my guests     :-). I made this cake on the beautiful day of Rakshabandhan and this is dedicated to beautiful relationship of every brother and sister. 

                                            Ingredients For Mango Vanilla Cake

For Vanilla Sponge Cake

  • All Purpose Flour – 1 cup
  • Condensed Milk – 1/2 cup
  • Milk – 1 cup
  • Baking Powder – 1 tsp
  • Baking soda – 1/2 tsp
  • Powdered Sugar – 1/2 cup
  • Vegetable Oil – 1/2 cup
  • Vanilla Essence-1 tsp

For Mango Filling

  • Mango – 2 Cups Chopped
  • Sugar – 1/2 tbs
  • Lemon Juice – 4 drops
  • Whipped Cream Topping

For Vanilla Sponge Cake

  • Sift all purpose flour(maida) ,baking soda & baking powder.Keep aside.
  • Beat powdered sugar and condensed milk till fluffy. Add oil.Beat well.
  • Add milk and vanilla essence.Add all purpose flour,baking soda & baking powder mixture.Beat well for 3-4 mins till the mixture smooth & light.
  • Take a micro proof glass dish or plastic container.Grease the container with oil.Pour the cake batter into it.
  • Microwave for 5 mins.Let it stand for 5 mins in the microwave.The cake is ready when it leaves the side of the container and spongy to touch.
  • Let it cool.Invert the cake over the platter and tap to unmould the cake.

For Mango Filling

  • In a hot pan add chopped mangoes and sugar.
  • Cook it for 5 to 7 min in medium heat.
  • Add lemon juice.
  • Let it cool.

How to Proceed

  • Cut The cake in 3 layers.
  • Take one layer of the cake and spread a layer of whipped cream on the corner of the cake with the help of the piping bag.
  • In the center of the cake spread caramelized mango filling.
  • Top with second cake layer and spread some whipped cream on it. 
  • Now top it with third layer of cake.
  • Cover the cake with whipped cream and garnish with some mango slices.
