Mango Vanilla Cake is rich, soft and mouthwatering eggless cake, prepared with fresh mango. Its an amazing combination of vanilla sponge cake and caramelized mango cubes with some whipped cream topping.

Mango season is almost gone..so before I say bye bye to mangoes I had to try a recipe with mangoes. so why should it not be a cake as I love to try different cake recipes. Mango is a fruit loved by everyone or I can say its a food of God. In this recipe I have caramelized the mangoes with some sugar and few drops of lemon. Mango Vanilla Cake has a vanilla sponge cake as a base and mangoes as a filling. I know It was not perfect in looks but it taste was great as said by my guests     :-). I made this cake on the beautiful day of Rakshabandhan and this is dedicated to beautiful relationship of every brother and sister. 

                                            Ingredients For Mango Vanilla Cake

For Vanilla Sponge Cake

  • All Purpose Flour – 1 cup
  • Condensed Milk – 1/2 cup
  • Milk – 1 cup
  • Baking Powder – 1 tsp
  • Baking soda – 1/2 tsp
  • Powdered Sugar – 1/2 cup
  • Vegetable Oil – 1/2 cup
  • Vanilla Essence-1 tsp

 

For Mango Filling

  • Mango – 2 Cups Chopped
  • Sugar – 1/2 tbs
  • Lemon Juice – 4 drops
  • Whipped Cream Topping

For Vanilla Sponge Cake

  • Sift all purpose flour(maida) ,baking soda & baking powder.Keep aside.
  • Beat powdered sugar and condensed milk till fluffy. Add oil.Beat well.
  • Add milk and vanilla essence.Add all purpose flour,baking soda & baking powder mixture.Beat well for 3-4 mins till the mixture smooth & light.
  • Take a micro proof glass dish or plastic container.Grease the container with oil.Pour the cake batter into it.
  • Microwave for 5 mins.Let it stand for 5 mins in the microwave.The cake is ready when it leaves the side of the container and spongy to touch.
  • Let it cool.Invert the cake over the platter and tap to unmould the cake.

For Mango Filling

  • In a hot pan add chopped mangoes and sugar.
  • Cook it for 5 to 7 min in medium heat.
  • Add lemon juice.
  • Let it cool.

How to Proceed

  • Cut The cake in 3 layers.
  • Take one layer of the cake and spread a layer of whipped cream on the corner of the cake with the help of the piping bag.
  • In the center of the cake spread caramelized mango filling.
  • Top with second cake layer and spread some whipped cream on it. 
  • Now top it with third layer of cake.
  • Cover the cake with whipped cream and garnish with some mango slices.
